Description

One of the easiest cookies you will ever make! I am talking about these amaretti morbidi, Soft Amaretti Cookies made with almond flour. They are absolutely delicious, addictive, and gluten free to boot!

Ingredients
  • 4 cup Almond Flour
  • 1 (1/2) cup Sugar (Granulated)
  • 3 Eggs (Large)
  • 1 tsp Almond Extract
  • 1/2 cup Granulated Sugar (For Rolling)
  • 1/2 cup Sliced Almonds (Darnish (Optional))
Instructions
  1. Equipment needed : Parchment lined baking sheets

  2. In a bowl, combine almond flour and granulated sugar.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Gently fold the egg whites into the almond mixture.

  5. Stir in the almond extract.

  6. Form the dough into small balls and roll them in confectioners' sugar.

  7. Place the cookies on the prepared baking sheets.

  8. Bake for 12 minutes or until they are set and have a slight crust.

  9. Let them cool before serving.
